Ingredients

  • 500 g sausage mince (or sausages with casings removed)

  • 1 egg
  • 2 tsp Worcestershire sauce
  • 1 tsp dried mixed herbs (or Italian herbs)

  • 1/2 tsp black pepper
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Method

  1. Preheat: Preheat oven to 200°C (fan 180°C). Line a tray with baking paper.
  2. Make the filling: In a bowl, combine sausage mince, onion, garlic (if using), breadcrumbs, egg, Worcestershire sauce, herbs, salt and pepper. Mix until just combined.
  3. Prepare pastry: Cut each puff pastry sheet in half lengthways to make 4 long strips.
  4. Fill: Divide filling into 4 portions. Place a line of filling down the centre of each pastry strip.
  5. Roll & seal: Brush one long edge with egg wash, roll up tightly, and place seam-side down. Chill for 10 minutes if you want cleaner cuts.
  6. Cut: Cut each long roll into desired lengths (mini or standard). Place on the tray with space between them.
  7. Finish: Brush tops with egg wash. Sprinkle seeds if using. Lightly score the tops (optional) for a neat finish.
  8. Bake: Bake for 25–30 minutes or until deep golden and cooked through. If your oven runs hot, check at 22–25 minutes.
